White Lilium Vineyard
Inzolia grapes come from the Partanna area at an altitude of about 350 meters above sea level.
The soil, rich in organic matter, has a mixed structure, tending toward sandy, where the limestone rock reserves a distinctive flavor and freshness to the wine.
Zibibbo grapes are grown at an altitude of about 400 meters above sea level. The hilly terrain is medium-textured, rich in silt and clay.
The high temperature ranges between day and night, even 15 degrees, give the wine a rich bouquet of citrusy floral scents typical of Sicily.
White Lilium Harvest
First decade of September for Inzolia and second decade of September for Zibibbo.
Grapes are harvested during the coolest hours of the day so as not to set off fermentation processes that would degrade the aromas.
Vinification Lilium White
Separate vinification is carried out, in thermo-controlled steel winemakers at a temperature of 15°C to preserve aromas.
At the end of fermentation, maturation continues at a controlled temperature, with subsequent blending and bottling and brief bottle aging.
Organoleptic characteristics White Lilium
Lilium Bianco shows a pale straw yellow color with light greenish highlights.
Exhilarating on the nose for its extremely elegant aromaticitỳ related to the high temperature ranges between day and night; on the palate it is slightly savory and fresh, a typical characteristic conveyed by the limestone soil.Esaltante al naso per la sua aromaticità̀ estremamente elegante, legata alle alte escursioni termiche tra il giorno e la notte; al palato si presenta leggermente sapido e fresco, tipica caratteristica trasmessa dal terreno calcareo.
Pairings: Recommended pairing with fish dishes, crudités and various main courses. Exuberant when served as an aperitif the white Lilium.
Vigneto Lilium Rosso
Syrah grapes come from the Partanna area at an altitude of about 150 meters above sea level.
The soil has a silty-clayey structure rich in organic matter, of alluvial origin.
Nero d’Avola grapes are grown at an altitude of about 300 meters above sea level in a slightly hilly, medium-textured soil rich in organic matter, where, air currents, coming from the sea, help maintain a healthy and dry environment until harvest day.
Harvest
Late August for Syrah, second decade of September for Nero d’Avola.
Grapes are harvested during the coolest hours of the day, preserving aromas and not setting off spontaneous fermentation processes.
Vinification Lilium Red
Selected grapes are vinified separately in steel silos at a temperature of about 25°C (77°F), macerating on the skins for about 10-15 days.
At the end of natural malolactic fermentation, maturation continues in steel.
After blending, the product ages in the bottle for another 3-4 months.
Organoleptic characteristics Lilium Rosso
Red Lilium shows a bright ruby red color with purple highlights on the nail.
Very fruity bouquet with hints of red fruits such as wild berries, blackberries, raspberries and slightly spicy on the palate reminiscent of licorice.
A young, harmonious and pleasant wine that recalls the warmth of Sicily.
Pairings for Lilium Rosso: Recommended pairing with sauce-based dishes, main courses of meat that is not too fatty. Exuberant when served as an aperitif Lilium Rosso accompanied by cured meats.
